Tofu coagulants


​All coagulants come with full pdf instructions attached to your confirmation e mail. Please read the descriptions to make your choice, each coagulant creates slightly different results. Yields will vary depending on the freshness of your soybeans and firmness will vary between coagulants and on differing pressing times.  You will not need  a forming box or press for making silken tofu. To make firm tofu, you will need a tofu press or baskets to form the curds.
If you would like to try a variety of coagulants for making firm tofu, it is recommended you purchase a
3 coagulant tofu making kit.

GDL (Glucona Delta Lactone)

GDL is used for  making  silken tofu. GDL is a 100% natural, animal free product.
3 grams will produce 1 litre of delicious silken tofu. The 60 gram pouch will produce 20 litres. Full instructions are included.

Nigari

Probably the best known of all coagulants and used to produce quality firm tofu. It is a mixture of natural sea minerals, magnesium chloride plus salts and trace minerals. It produces a subtle sweet aroma and flavour. It is Japans most traditional coagulant. Easily dissolved in water. 90gm will make at least  9 press sized blocks.

Calcium sulphate or gypsum

It is the most natural, highest yielding and easy to use coagulant. It mixes easily in cold water. One of the oldest known coagulants,  used by the Chinese tofu producers. Results in a high yeild tofu with a slightly coarser texture.

Magnesium sulphate

​Magnesium sulphate is used commercially in the west. It is the highest yielding coagulant produces a cohesive and medium textured tofu that holds together well. 
​
